Ingredients:


1/2 cup porridge oats

1 small banana

1/2 tsp baking powder

1 egg

1 heaped tsp nut butter (almond of peanut I used)

drizzle of maple syrup


To make this recipe, simply combine rolled oats, baking powder, nut butter, egg, maple syrup, and a ripe banana in a blender. Then, blitz everything and pour it into a baking dish. Bake for 20 minutes at 175c and voila! You’ve got yourself a healthy and delicious breakfast or snack.



TIP: Don't bake longer than 20 minutes otherwise it will dry out


I have to say that I was really pleasantly surprised with this breakfast option. It's a great way to start the day without feeling weighed down by gluten. The texture is perfect and the flavor is just right. I will definitely be keeping this one in my rotation!
